My friend and teacher Jennilee leaves this week to teach Embodied Anatomy in Costa Rica. I’m sending her off with some (new and improved!) Fudge Babies, packaged in a darling cake pop manner.
This presentation helps avoid the dreadful confusion with fudge babies and meatballs.
2 cups pitted dates (I used organic medjool variety, easy to remove the pit)
1/2 cup oats (mine are gluten-free, but feel free to omit..reduce dates by 1/2 cup accordingly)
1/2 cup raw unsalted sunflower seeds
3/4 cup unsweetened shredded coconut
2 tbsp raw cacao
1/2 cup dairy-free chocolate chips
1 tsp vanilla
optional – 1 tbsp nutritional yeast (I don’t taste it, others say they can; up to you!)
Blend in food processor, then roll into balls with your scrupulously clean hands. I keep these in the fridge because of the chocolate. These are my biggest healthy [shhhh!] dessert ever.

Thanks! I was pretty pleased with myself…had to figure out a way to avoid the meatball comparison, and the cake pop kit saved me. 🙂
Seriously, they really taste fudge-like and unhealthy. But they are chock full of protein, antioxidants, vitamins – especially B12 with the nutritional yeast, and better yet, they are vegan, raw, and gluten-free. The toughest thing is rolling them into balls.
